Blueberry Coffee Cake Muffins:

Ingredients for bowl 1

Flour 1 ½ cup
Baking powder 2 tsp
Salt ¼ tsp
Sugar 1 cup
dry blueberries ¾ cup

Ingredients for bowl 2

Butter milk ½ cup
Oil ¼ cup
Vanilla essence 1 tsp
Egg 1

Ingredients for topping

Flour ½ cup
Caster sugar ¼ cup
Brown sugar ¼ cup
Coffee powder ½ tsp
Cinnamon powder ½ tsp
Vanilla essence few drops
Chilled butter 3 ounce

Method

Mix together all the ingredients of bowl 1 and bowl 2 in two separate bowls, pour wet ingredients in a dry ingredients bowl and mix well with a spatula, do not use electric beater, batter will be lumpy, and pour in muffin cases. Now prepare the coffee topping, mix together topping ingredients and rub in chilled butter, sprinkle the topping on each muffin cup over the batter and bake for 20 mins on 180 d.

Fajita crunch wraps:

Ingredients for crunch
Flour 2 tbsp
Rice flour 3 tbsp
Salt pinch
black pepper pinch
Water as required
Oil for deep frying
Other ingredients
Tikka boti 1packet
Oil for frying
Ingredients for sauce
Sar cream ½ cup
Hot sauce ¼ cup
Ketchup 2 tbsp
Cream cheese 1 tbsp
Salt & pepper to taste
To assemble
Iceberg lettuce 1
Cheese slice 1
Tortillas 4-6
Method
Fry tikka botis , mix together all the ingredients for sauce, keep aside. Make a pancake like batter for crunch and drop it in oil to deep fry until golden and crisp, break into chunks.
To assemble
Apply tortillas with prepared sauce, then iceberg lettuce, cheese slices, crunch pieces, botis , wrap up well and serve hot.

Orange iced mocha:

Ingredients

Orange juice ½ cup
Chilled water mixed with coffee ½ cup
Evaporated milk ¼ cup
Condensed milk 2 tbsp
Cream 2 tbsp
Chocolate syrup 2 tbsp
Crushed ice 1 cup

Method

Combine all the ingredients together in a blender, blend and serve.
